i made my first fatty yesterday. ground venison (beef fat added) seasoned with adobo and goya sazon. i filled it with a cooked and cooled spanish rice side mix and shredded taco cheese blend. 2 hours of hickory at 225 degrees then took it to IT of 155. everyone went nuts for it.
