After seeing a few post of Char Sui I had my Asian neighbor pick me up some char sui marinade and sauce from the Asian market last time he went. I cut up a boston butt into chunk and marinaded overnight. I wanted to cut the pork into strips and run a skewer thru them but I had trouble cutting the butt into strips. Not sure if it was the beers or my knife skills. (or lack there of...) ??? :-\

I smoked them with Alder wood for about 2 hours and brought the IT up to 160 and ftc'd. After ftc it was time finish them on the Char broil red.

What temp did you smoke them at? 225ºF?

A beautiful meal and a good idea. Country style ribs would work for me with your beautiful selection of veggies for the stir fry.

I would also do country style ribs next time... Or maybe a pork tenderloin...
When I did the Chinese Pork, I had all sorts of plans....but after slicing up and served with a couple of dipping sauces, it just went away.
