Hi guys, this afternoon, i started a 2LBS of jerky using Nesco teriyaki mix but i made a mistake. The recipe calls for 2 packs of seasoning + 2 packs of cure but i only put 1 pack of cure. What will happend? Is it deep? Sorry for bothering you with such mistake.
I think it will be fine. Keep it in the fridge or freeze it if you're not going to eat it all right away.

Are you using ground meat or whole muscle? If it is whole muscle I wouldn't worry about it, if it is ground posting more details will be helpful.
Cure protects the meat while it is dehydrating, after it has dehydrated it is the lack of moisture which prevents the growth of bacteria; not the cure.

You are alright, if you were making it from ground meat then there would be some concern.
THX anyway it turned out good. But teriyaki Nesco, American Harvest are just not my favorite. Just seems tasteless to my liking. THX for your time.
I had an old Nesco, and had used their mixes. I recall them as being pretty good. Their mixes are made for ground lean meat, but I don't know if that would make a difference for flavor, if you applied it to whole muscle. The cure adds that additional flavor, so if you only used half the cure and applied it to whole muscle that could be the difference.
Ah Ah...That could explain the lack of flavor (i put only half the amount of cure). But as far as the grounded VS whole muscle, it has both directions on the package with only one difference, for whole muscle, adding half of a cup of water.
