This is something that has always interested me and is extremly hard to find. It is called indian candy and is salmon that is cured in sugar? and or maple syrup?. If anyone knows I would be greatful and quite possibly be willing to ship out the final product. Thanks

Tried the first batch, perfect texture 140 deg for 6 hours, however it was a little too salty even with the maple syrup brushing at hour three. Maybe try cutting salt in half? will probably try again. ritzdeliman
Ritz-have you looked at Kummok's recipe for salmon strips? It will make your taste buds get up and sing!

I used Kummok's recipe on some steelhead last night. Came out great.
Was quite sweet for my taste though. Next time I will use less brown sugar and more salt. If you do it by the recipe, you wont be let down.
