Title: Pemeal

Just finished a small 3 lb batch of pemeal. Unfortunately there was'nt enough left to smoke but that is the next batch. Maybe I won't roll it in cornmeal before smoking? it might have adverse effects on the final outcome as far as flavour goes. Any thoughts?
I used 1 tbls cure per pound of meat
Added 1 tbls maple syrup for sweetness
It was delicious!!!
