Title: Rick's Butt
Post by: rcger on August 06, 2011, 03:59:11 PM
My local Schnucks had whole butts on sale this week so I picked up a few.  Unfortuantely, the freezer was full and this one wouldn't fit.  So, I was forced to slather it in CYM and rub let it rest for a few days and then smoke it.  It was in my DBS for about 15 hours.  That included 4 hours of Hickory, Apple and some left-over Jim Beam pucks.  My tongue almost beat my mouth to death!

Niiiiice!

The bark looks great and I gotta have some beans with my pulled pork.

You should try addin some of that pork to your beans, sets it over the top.

I usually try to save some to add to beans, but with two boys, both in their 20s, there's usually not much left.

Squirrel, they also had some fresh tri-tip.  I bought 3 of those.  When I asked the butcher if he had any he told me that Missouri guys weren't supposed to know about tri-tip.  He asked how long I had lived in California.  (I never have).
