Title: Ribs a la Sparky
Post by: GusRobin on August 06, 2011, 06:29:08 PM
So Sparky posted an interesting rib recipe so I thought I would try it (or close to it).
Heated the Bradley to 265 at which time I found out my maverick 73 wasn't working. Which gave me a good excuse to order a Maverick 732. Was  going to order it from yard and pool but they are out until 8/15. So I went the Amazon route. Paid a little more but it was in stock. But I digress.
Rubbed the ribs with some CYM, added some rub

Spritzed with some beer in honor of International beer week, threw it into the bradley with 2 hours of hickory. After 1 hr I flipped them and spritzed again.
Here they are after the 2 hours of smoke.

Added 1 tbs of butter, handful of dark brown sugar and sprinkled it with honey. Foiled with 2 layers of foil and threw in the bradley for another hour. Getting ready to foil:

After 1 hr in the foil, took it out of the Bradley, unwrapped the foil, put the ribs on the rack poured the juice in the foil into a bowl and then poured it ovet the ribs. Ready to go back in (snuck a taste from the corner):

All done and cutting up to serve

Ribs, corn on the cob, syracuse potatoes with butter, chives and sour cream

Same thing with some BBQ sauce

These ended up excellent. The wife says she likes these the best. Thanks for sharing Sparky.
