Title: Rescue Mission Part 1 ............ Smoked Cheese.

Am going to Pensacola on Friday morn to bring Home my Sausage making room.

I am having to pay for this by bringing smoked goodies.

That works for me.

Took a long nap yesterday afternoon and waited till mid-nite for temp to drop

below 85* Just decided to run smoke gen with cold smoke adaptor and keep an eye

on the cabinet temp.

60 pkgs of 8 oz assorted cheese (some were bonus packs 9.6oz)

Over 30 lbs of cheese on 10 racks with three hours of apple smoke.

After about 30 minutes of cutting packages open.

I rotated the bottom 4 racks every hour.

I fridged them after a cool down period and started vac pkgin them this morn.

a 6 x 10 walk in cooler. 6 inch insulated walls and floor.

gonna cool it down with a 12000 btu a/c unit and a cool bot.

should be able to keep temps in the 34* to 38* range.

Break Down on the cheese:

20 blocks of Pepperjack
8 blocks of ColbyJack
7 blocks of Sharp
7 blocks of Mozzarella
4 blocks of Monterey Jack
8 blocks of Mild Cheddar
6 blocks of Xtra Sharp Cheddar

After this if someone ask for smoked cheese, I am telling them ......

the cheese smoking machine is BROKE!
