Title: An idea for using salami
Post by: Drac on August 09, 2011, 05:42:26 PM
Hi all,

Got a new cookbook in today.  Definitely off the wall, book is titled Bite Me.

A lot of unusual recipes.  One that I thought you guys might find intereting -

Sweet and Sour Candied Salami

7 cups beef salami, cut into 1" cubes
3 1/2 cups Heinz chili sauce
1 cup apricot jam
2 lemons, juiced
3 tbsp Worcestershire sauce

1)  Preheat oven to 350F
2)  Place cubed salami in a 13x9-inch baking dish
3)  In a medium bowl, whisk chili sauce, jam, lemon juice and Worcestershire sauce.  Pour over salami.
4)  Bake uncovered, stirring every 20 minutes, for 1 1/2 to 2 hours, until sauce is reduced by half and thickened.  Serve with toothpicks.

Serves 8-10 (yea right  ;D)
