Title: 1st Brisket/finished pics

After a long 8 days at work, I could barely wait to get home and try smoking up my first brisket.  I was able to pick up an 11 pound brisket at the local market and brought it home to season it up.

I rubbed it down with a mixture of Jalapeno mustard and Jan's rub

After seasoning it appropriately, I wrapped it up and put it into the fridge overnight.

After pulling the brisket out of the fridge, I let it rest for a couple of hours and then into the Bradley it went.  Planning on doing 4 hours of Hickory.  We'll see how it turns out.  It went in tonight at 6 pm, so we'll see what the evening brings.  First time doing a cook all night.  Wish me luck :)

Well, I checked on the brisket throughout the night and was super pleased that the Auber held the temperature right at 225* and that there weren't any unexpected problems.  The brisket hit 190* at 0815 and was removed from the smoker...

After removing from the smoker, FTC'd for 4 hours and then brought it back up for the cut up..Figured I'd cut half up for dinner with the family and vacuum seal the other half for later ;D

My wife says that it was the best tasting brisket she's ever had ;D ;D ;D ;D I have to agree with her that it was pretty darn tasty.  Can't wait for next time :D

Great price, Great Brisket and some Great Mustard!   Will be watching this one for sure..

Don't have the Jalapeno, but I do have the Woeber's "Hot and Spicy"

Make sure to change the water whne the smoke is done. Looking good so far.

I seen some of that jalapeno mustard at the store this weekend when I was getting some spicy brown mustard, along with a couple other flavors from that same company.
