Title: Greg's Spicy Sticks with a Hatch Green Chili Twist

It's that time of year again - the Hatch Green Chili harvest.  My local grocer was roasting them Saturday.  Bought half a case of mild and half a case of hot.  Picked up 5 lbs of 80/20 GB to make Greg's sticks.  Since I had the fresh roasted chilis, I thought why not.  Cut back a tad on some of the other spices to make sure they were not to HOT.  I sampled the hot chili and it will put a zing on your for sure.

One bag of each.  I have two bags of each.

The spices called for and the chilis.  Mild on left, hot on right.

I used my jerky gun and not the stuffer with casings.  Did not get a pic before they went in.  Did 2 hrs of Pecan at 150* then up to 170* until they were done.

Closer look.  They are mighty good.  The chilis add a nice spice that lingers after you finish the stick.

Yumm and zing.

Bet those would be good with a cold beer.

Those look delicious, have you or anyone else tried cutting up fresh Jalapenos and mixing them in the GB?  I have a garden full and am thinking about it.  Nice Job.

I am sure Greg may have made that alteration but give it a try and let us know how it works

How can you tell when the sticks are done? I just got my jerky gun today and I'm chomping at the bit to try it out.

yep, diced fresh penos work well. i never had the chance to try a famous hatch chili but they sure look great.  :)
