Thanks for the great info on cures!  I have a followup question - does anyone know how closely Bradley Sugar Cure and Maple Cure compare to the cures listed in the link?  Are they essentially interchangeable with Morton's Tenderquick?

They are not quite "measure for measure" but the information is on the container as to the ratio of cure to meat for curing.
