Title: Testing/Tasting your sausage
Post by: jbullard1 on August 18, 2011, 04:35:32 PM
I just made 30# of venison summer sausage   using a High Mountain kit
I know that ain't right but I had the meat and kit and I'm a novice
The first 4 casings were stuffed exactly by the instructions
Then high temp cheddar was added and mixed in
I stuffed 2 Casings with this mix
Then the beer kicked in during the stuffing process
I took 3 red jalapeno and 6 sweet banana peppers, cut the stems off dropped them in the food processor, added 4 ounces of Jack Daniels old #7 whiskey and turned it on
Poured this into the remaining meat and made a special summer sausage "JUST FOR ME"
I can hardly wait on the results
I took the last scraps and did a slow fry cook on them and it tastes GREAT
I just hope the rest turn out as good
Jerry
