After all the company this past month, and all the smoking, we needed a change for a few days. Made some Red Enchiladas.
Getting spices and ingrediants together.

Bacon fat and flour for roux

Add spices and stir

Add boiling water and you have sauce

Fry corn tortillas lightly in oil then dip in sauce

Add cheese, onions, black olives

Roll up and put in pan

After all rolled, pour leftover sauce over them, sprinkle with more onions, cheese and olives

Baked for 20min at 350.

This recipe is for a dozen. I usually triple it for 3 dozen. Not a fancy recipe...just a basic cheese enchilada.
3 TBS bacon drippings(can use oil but bacon fat makes for better flavor)
3 TBS flour
2 beef bouillon cubes or 2 tsp beef bouillon granules
1 tsp salt
1/2 tsp garlic powder
1/2 tsp ground cumin
2 TBS chili powder
1-2 cups boiling water
1 pound cheddar cheese
1 small onion chopped
sliced olives optional
Brown flour in bacon drippings. Take off heat to add next 5 ingredients. Mix well and return to heat. Slowly add water, stirring to a smooth red sauce. Simmer gently while preparing other ingredients. Add more water if sauce gets to thick.
Heat oil in another skillet. Quickly dip tortilla in hot oil, then in sauce. Dipping quickly in oil prevents them from getting rubbery.
Fill with cheese, onions, olives. Roll and put seam side down in pan(9x12). Pour remaining sauce over all, sprinkle with leftover cheese, onions, olives. Cover tightly with foil and bake in preheated 350 oven for 20 min.

I'm happy to share the recipe. I better warn you all....your house will smell like a Mexican house or restaurant! We've tried with other fillings....and they all work great. Especially if you soak some of the meat in the sauce!
