I made some more ground beef jerky sticks using my new LEM jerky gun. I used a 5lb mix of 80/20 chuck. Meat was seasoned with Backwoods regular jerky mix, some cayenne pepper for heat, and cure#1. Started the Bradley with convection fan on to 155F. Gave them 5 pucks of Applewood smoke. Slowly progressed to a finishing temp of 170F. Drying time was 6 hours ;D

I've been wanting to do some sticks, but I wasn't ready to jump into stuffers, casings and the like. This looks like my next step. Now I need to look into the guns. Thanks for the inspiration.

This is the gun I have. It works great and comes with a seasoning and cure packet :)

Thanks Muebe - I was too quick on the trigger. I ordered mine before I looked at your reply. I looked at Amazon and didn't find this page you linked, so I went to LEM and bought the same thing for the same price, but bent over for $8.95 in shipping >:( Ain't it the way! Honestly, making sausage is so much fun. When I grow up I want to be like Kirby.......churnin out 60 pounds at at time LOL

Sailor you just have to keep out a sharp eye for the road kill and you will have enough for a big batch.
Not really but I have found this time of year there are many hunters that have not finished off last years wild game. It is a good time to find friends that want to do it on a share basis. I have not had to do that lately but I used to do it quite a bit of the time. I ended up with more meat then I needed.
