Well hope their is no Ground Hog Gods or protecters here. LOL.
When I grew up Dad had a lot of rules. You know like shoes off before entering the house.Eat everything on your plate.Also

eat any thing you shoot. Well seems like those days are hard to forget and find myself following them daily. So when the

ground hogs started raiding the garden I needed some more recipes. (lots of ground hogs) LOL This is really good and real

popular as long as you forget to tell them whats in it. Don't forget to remve musk glands under for arms and back. Some

prefer to soak overnight in a light salt mixtur




Paul's Summer (Ground hog) Sausage Recipe

2 pounds ground hog
1 cup of water
3 tsp tenderquick
1/2 tbsp cayenne pepper or to taste.
1 tsp nutmeg
1/2 tsp garlic powder
1/2 tsp black pepper


Grind meat. Mix spices and cure into water to desolve. Mix well into meat and refrigerate. Let set overnight or fo 2 days

mixing at least once every 12 hours or so.Stuff in 40 mm casings and Dry at 120 for one hour,smoke for 3-4 hours at 160

then increase temp to 225 till IT reaches 160

I smoked a squirrel, but never posted it.

Couldn't find any meat on it to check the IT.

Was like eating a leather boot.

Won't shoot them no more as I don't know how to make

Look like a new sausage I may try, since there are plenty of woodchucks in my area. :) I did note that the recipe calls for 3 times too much TQ then is actually needed.

Sorrry typo Hab should be tsp. not tablespoons. Tender Quick says 1.5 tsp for ground meat and 1 Tbs. for muscle meat. It is a good sausage though. I'll correct the error.

Not sure about Costco. We cant even find a Costco in this area. LOL But you can find them about anywhere but a store.

Love fried  squirrel gravy and biscuits. Bet it would make good sausage if you got a few. Rabbit is excellent! Muskrat is also a great meat and a little sweet.

You might be able to draw a bead on some over on Rodeo Drive  ;D :o
