Went on the chat for the first time last night. Was asked by Classicrockgriller,Friar Tuck, and Tiny Tim for my wife's recipe for Rye Bread so here it is:
Ingredients:
1 package (1/4 ounce) active dry yeast
1-3/4 cups warm water (110 to 115 degrees), divided
1/4 cup of packed brown sugar
1/4 cup of medium molasses (you can use light or dark also according to your preference)
1-1/2 tablespoons of caraway seeds ( again you can adjust to fit your taste)
2 tablespoons of canola oil
3 teaspoons salt
1-3/4 cups of rye flour
3/4 cups of whole wheat flour
1-3/4 to 2-1/4 cups of all-purpose flour
Directions:
In a large bowl, dissolve yeast in 1/4 cup of warm water. Add the brown sugar, molasses, caraway seeds, oil, salt, and remaining water; mix well. Add rye flour, whole wheat flour and 1-3/4 cups of all-purpose flour. Beat until smooth. Stir in enough remaining flour to form a firm dough.
Turn onto a lightly floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a bowl coated with cooking spray, turning once to coat the top. Cover and let rise in a warm place until doubled, about 1-1/2 hours.
Punch down; shape into two round loaves. Place on a baking sheet coated with cooking spray. Cover and let rise until doubled, about 1 to 1-1/2 hours.
Bake at 350 degrees for 30-35 minutes or until golden brown. Remove from cooking sheet and place on wire rack to cool.
Slice and enjoy! ;D
Thanks for that post. A while ago I got myself a grain mill and have been making all manner of flour and baking bread. Gonna have to give this a try. Thanks for posting. I grind my own corn too for making polenta. A world better than the commercial products.
