Made this last year and just found my secret receipt on it.
1 1/2 lb sliced turkey breast
1/4 cup soy sauce (salty Kikoman)
1 Tbs lemon juice
1/4 tsp garlic powder
1/4 tsp black pepper
1/8 tsp ginger powder
1/4 tsp cure #1 (even if just going to dehydrate)
Mix all the marinade ingredients together. Pour over turkey strips in a plastic bowl and put in fridge for 8-10 hours moving the turkey around a few times to evenly marinade.
Place in pre heated smoker with your choice pucks at 150* for 2 hours. Bump heat to 170* with no smoke until turkey jerky is done. Turkey will not be like beef jerky, It can get dry fast and very brittle. Don't leave unattended or you will have burnt turkey jerky.
Dry time will vary with the thickness of the meat. You can dehydrate this after you have put smoke to it.

As for the secret recipes I am a thinkin that we here are lookin out for our good friend Rick. I am a thinkin that maybe he should post all of them secret recipes here for just in case his secret recipe books gets lost or stolen in the move. Posting them here will keep them safe an sound. ;D
