2 lb 90/10 GB
1/3 cup soy sauce
1 tsp liq smoke (opt if not smoking)
1 1/2 tsp brown sugar, dark or light
1 tsp non iodized salt
1 tsp black pepper
1 tsp smooshed garlic
1/4 tsp + a pinch of cure #1 (if going in smoker)
Combine all marinade (dry) into the soy sauce, mix well. Pour over GB in a plastic bowl and mix together. For a better flavor, cover the bowl and fridge overnight.
Next day extrude the GB jerky onto your racks and smoke at 160 with 3 pucks of wood. After the pucks are done bump heat to 170 and continue until the GBJ is bendable. (Careful you dont over heat) You want it kinda chewy, not to dry
