Had some gloriously delicious smoked chicken this weekend and thought I would share. Mixed up some of Jan's rub on Friday afternoon and generously rubbed two whole fryers that I had halved. Left those in the fridge wrapped nice and tight till Monday around 4pm when I added some cherry wood and 250 degrees of heat for about 3 hours. I flipped them once about half way through as I was taking out the cheddar beer brats and chicken, bacon, and swiss patties I'd gotten at the local Von Hansens. In the end, dinner consisted of holy smoked chicken (Jan's rub is phenominal), mashed potatoes, corn, and gravy. The colonel ain't got nothing on me! :)
