Title: My shot at Pistachios
Post by: OU812 on September 06, 2011, 06:52:16 PM
First off I felt like "Why season the shells your not gonna eat?"

So I shelled the 3 lb bag of pistachios,,,,,,,took just under an hr.  ::)

Then I mixed up 5 Tbl unsalted butter,  1 cup green pepper sauce (I couldnt find green Tabasco)
1 1/2 tsp salt and 1/3 cup Lea & Perrins Worcestershire sauce.

The green stuff.

All the good stuff mixed togeather, I mixed every 5 min for 30 min.

All ready for the smoker.

Outta the smoker.

You need more heat do ya?

1.5 Million scovil units of it.

1 toothpick drop will heat 10 gallons of chili  :o

They look great Curt.  Did you leave out the cup of liquid from the pickled jalpeno jar?  That would have given you a little more heat but you still are probably looking for even more heat.

Wasabi powder? Packs a punch...just a thought? Nice to get two different flavors...especially on a lovely nut like pistachios

To me part of the fun of eating a seasoned pistachio is all

the extra seasoning/flavor that gets stuck in the shell.

The nut itself can't absorb too much of any liquid

so it has to dry on it. Just my thinking.

By the time I put these nuts on the rack there was no liquid left in the bowl and very little dripping of them as I placed them in the smoker.

I had a big hand full of these babys a wile ago and can still taste the smoke.

Curt, like a lot of things coming out of a Bradley and other smokers, in my opinion I have found that the pistachios smoke flavor gets more pronounced the next day.  Mmmmm good.

I totally agree, the smoke is more robust a day or two later.

Oh Ya! I left out the pickled peno juice to see what just the green stuff would do.  ;D
