Title: My Project For Today

Had 10lbs. of GB I needed to use up. Today's plan is GB jerky. Loaded up my Kirby Cannon and made 7 racks of GB jerky using Greg's Spicy Beef Sticks recipe and a few extra ingredients not shown here. Nepa is not the only one who can keep a secret  ;D

This is after three hours of Crown Royal.

Had some still left in the Kirby cannon so off to find my left over hog casings. These should be good on pizza.
Going to have to do these tomorrow so in the fridge went and that's where they sit.

Looks like you may have a little to much jerky on your hands.  I would be happy to take the excess off you hands ;D

The jerky looks great.

Them jerky logs are gonna be gooood, you gonna stop the cookin at an IT of 152 or are you gonna keep cookin till there almost dry?

I'm thinking 152*F as I wanted to use them on pizza and such. Found out this morning my meat probe on my PID went south on me and I need to monitor it with my hand held so its going to be tricky.

I've got like 6 extra digital thermometers just in case some thing like this happens.  ;D

Got the sausage/beef sticks done. Smoked for 4 hours of hickory.
This time I thought I would try the hot water bath after the smoke. Man it gets to IT real fast that way. About fifteen minutes.

Had to taste one, dam those are good. way better than the jerky. Nice flavour and very moist. Just the right amount of heat.

Very nice Job devo, the boys at work should like them hell Fire sticks ;D ;D ;D Good lookin sausages, I got my eye on a 22 quart roaster at walmart for 60 bucks ;)

Brought some to the local bar in town and i think I'm going to be busy for a while. Think I just did this batch a little to dry for my liking but I only have half left so I guess my liking don't matter  ;D
