Hi Folks,

I think offal is one of those things people either love or hate, personnally I love lambs liver and onions with mashed potato and gravy as well as that other British delight..... steak and kidney pie!!   [:p] or [xx(] depending on your point of view!!

Has anyone any experience of smoking liver, came across a recipe in a cook book that looks good?

Not me, unfortunately (for the liver receipe).

I do like chicken and duck livers with onions, steak and kidney pie, and a couple of other offal dishes.  I once had camel brains in Saudi Arabia, but I didn't realize it until later because it was diced and highly curried and served as an appetizer with pita chips.  That was 12 years ago--I suppose I'll come down with Mad Camel Disease in about 8 years . . .
