This actually came from a dream after a nite of stuffing myself with Mexican Food.
I have never seen this anywhere and if someone has done these, I apologize.
Here's what I have done with it so far.
Took Mexican rice and refried beans and mixed them together.
You will need about 3/1 ratio of rice to beans so that it won't be too gooey.
After mixing that up, I took a teaspoon and spooned a glob onto a plate.
Stuck that in the freezer for a bit and then roll that mixture in the palms of
my hand to form a ball.

Next I set up a assembly line of flour, beaten egg, and panko bread crumbs.
Flour first, then egg wash and then a tumble in the panko.
Into a deep fryer till the outside crust is the color you like.
I did it three different ways.
Just rice and beans: they were ok, just not my favorite.

Here's some with just a flour batter. Was OK, but I didn't season the batter
as I really didn't know what was gonna happen or if it was worth the effort.

Here's some with chopped Jalapenos. So far my favorite.

Here's some "Special Ones" ;D
(http://i1109.photobucket.com/albums/h440/halfcajun/Mexican%20Balls/SDC13102.jpg)
Some after thoughts on my first try at this:
Don't get too big on making your balls (if it to be a finger food)cause all
that is holding this together is the outside crust.
If you use adobo to season the panko, don't get crazy with it cause it
turns pretty salty. I threw away my first cup of panko and just went with
pepper, no salt.
You could make up a bunch of these and set them in to freezer and after
freezing they could be bagged for frying later.
Chimichanga poppers!
See dreams can come true. 8)
I like the name.......................Chimichanga Poppers!
You were right they look awesome!!

Cool idea!
They look good Sonny, especially with the jals. Maybe you can concoct a dipping sauce to go with them?
Don't you need a tortilla to call it a chimichanga? But whatever it is , it looks good.

Dang you STC! ;D
Well it surely does look good, and they don't look like they would be hard to put together...
Looks good and bet they taste good. Might be interesting to shape in a cone and put in a pepper of some sort. Just thinking out loud. Will be sure to try them this way.
Dang, those look gooooood!
You got me thinking... WHAT IF (here, hold my beer!)...
What if you mixed the rice, beans, and jalapenos --- something like 1/2 and 1/2 with corn muffin mix? All mixed together?
Be kinda like a souxed-up hush-puppy or a fritter?

Lucky for you this isn't the era of Tom Laundry, it would be on. ;D
After Tom left, my heart for the cowboys went too.
You definitely need a dipping sauce for those Fried Monkey Balls... ;)
Sonny, those look really good! :)
However after further reflection, I'm thinking "Cajun Red Beans and Rice Poppers". :o Hmmmmm...............

This is why I threw this out there. I knew somebody would have
some great ideas about adapting it. I had some of the leftovers
from yesterday and just nuked them. They were great.
Ok... Then we could smash em down on fresh mozzarella...
Drizzle with a balsamic reduction, top with fresh basil, and call em Capresangas. Or not. :o

Hal, if you like it, I'm on your side.
I'm sure they could be smoked a bit after the deep fry.

Not a bad idea, but the crunch of the breading is a nice add to all the soft texture there.

...... and chunks of Crawfish tails.
Veron's!
Sometimes I think I am living right. Jan just turned to me and said "I think I'll make up a pot of red beans and rice today." Wonder what I could do with some of the leftovers? ;D

Yum! Might have to thicken it with MIES to get them sticky enough to stay together.

That was what was nice about the refried beans. They became the glue to
hold everything together. I guess if you have enough moisture in the mix
that would work till the freezing takes over.
Man those look tasty CRG. You rock.
Wow really looks great! I think I would add a a 1/2inch cube of jal jack cheese to the center. You dream some good dreams!
Thanks Si.
Sad to get old and dream of food. ;D

viper, you are dead on the money with that thought. Just got to love it!
Sonny, I hope you ain't saying that that is a bad thing!
Some mamacitas back home used to do something like this and then put them into a taco to consume. One made them long like a hot dog.
