Title: Boneless Pork Shoulder Question

Hey everyone.  Long time, no talk.  Hope everything is well.

I recently switched from Sam's Club to Costco, and they don't sell butts with the bone in.  I was wondering if you guys truss up boneless shoulders with some twine or if it will make a difference if it just hangs loose.  I don't want to take any chances drying out the big lumps of meat that compose the wing that hangs off these bad boys, especially with the hungry football crowd that's heading to my place on Saturday.

i have done bone in and bone less and use the same smoking procedures as you  normally  would .. and use a wireless thermometer to get the temp right on a few

If the meat is kinda jagged, then tying it won't hurt.

I deboned a butt once for fun and I tied it back together afterward.

Cooked great.

I would tie that bad boy up,you dont want them loose hunks drying out and over cookin.

It will cook more evenly tied up.

I have boned a few then cut open and laid flat then smoked and after the smoke tied up so it was back to the original shape,,,,,,,,tunred out great.

Just dont use a net,,,,,,,,,,it will be a bastard to remove once the bark has formed.

I have done the Costco boneless butts many times before and have not needed to tie them up. They have been cut really well and held together nice :)

I would open it up, season it on all sides, then tie it up for smoking/cooking.

Not to worry.  I rubbed the inside down so well I think it's illegal in Ohio.  It's not getting tied up until right before it goes into the smoker.  Now I just need to do some youtube research to figure out how to bundle up these behemoths and I'll be all set  :o

I have done numerous Costco boneless pork shoulders and never have ties them up and they all turned out great.
