Title: Muebe Nuggets Question

Can I use a different cure than the Cure #1?  I bought some online but it has yet to arrive and I am jones'n to try making some!  I got a cure from Gander Mountain but it says on the instructions to let the meat soak for 24 hours rather than the 4 that you guys have used.  Would I be ok to use that cure for just the 4 hours?

Gander Mountain Cure is Cure #1.     It's pink, correct?

No, kinda looks like sand.  I didn't see the pink cure there at all....the one I got is Hi Mountain Seasonings.

Oh, my mistake.  I've seen pink salt cure #1 at Gander Mountain.  Not sure what you have there?

Have you tried to go to Hi Mountain web site and read up on what you have?

Says very clearly not to cure any meat for less than 24 hours with their stuff, so I guess I will just have to be patient.

Are you going to use the Soy Vay? And is the Gander Mountain a seasoning with a cure in it or just a cure only? If it is a jerky seasoning then the nuggets might not turn out tasting right because the Soy Vay is what gives the nuggets their flavor and the seasoning might be too much on the taste buds when used with the Soy Vay :o

The nuggets are not as dry as regular jerky so using a cure is highly recommended but I do not think you have just a cure only :)

I do have a cure only, it is seperate from the seasoning. 

I was either going to use the cure, seasoning, and some low sodium soy sauce or use the cure and the veri-veri.

I would go with the cure and the Soy Vay. But make sure to save some of the  Soy Vay for the re-application as the nuggets finish.

irish, i,v used the HM stuff a lot.  The cure they have is usualy for a kit with seasoning. I would go the pink salt way and still soak 24Hrs, I,v done 2 batches with Muebes recipie with a little extra spice and they are the best. I like to give the cure and the soy and spice time to soak in to the meat. But if you have a revo that shorten things. :D
