Little something I did today with my OBS. I will try and get this right.. Enjoy
Boudin links seasoned and covered with mustard, cream cheese,jalapenos

Smoke jalapenos and Boudin links for a while

lay eggroll sheet flat and place a layer of boudin removed from casing,slice of cream chesse, slice of jalapeno.

Wrap into eggroll shape

Place flap down for a few seconds then turn until golden brown

Mmmmmmmmmmmm eggrolls.
I make them all the time using brisket or pulled pork or turkey, heck any thing thats leftover.

My husband makes a similar eggroll with lamb and India spice paste aka samosas...lamb, potatoes, peas, Major Grey chutney and vindaloo paste...traditionally they look like triangles...we do them like eggrolls and fry them...
I know those, you made cajunboudraeux gotta be excellent...
