About 3 weeks ago one of my fly fishing buddies went to go meet his maker. He did not have any family, so we were sort of his family. In honor of his passing, we are doing a number of things with his stuff that we are hopeful that he is looking down and smiling on. One of the things that got brought up is to have a BBQ in his honor. Thought that was a good idea. I'm gonna have definitely
Brisket
Butts
Brats
Spatchcocked Chicken
ABT's
Fatties
Smoked Catfish Dip
Buffalo chicken dip
Caney "Muffins"
Beans
Any ideas from the crowd? Can't do ribs as they take up too much room in the smoker to feed that many people. Would like at least another meat or two, a WOW side and possibly a WOW dessert! Finally found me some CT - so now I can use that if you have a special dish.
What about leg of lamb roast?
Center cut pork loin cut 1 1/2 - 2" thick then stuffed.
I'm getting ready to stuff a Top Loin, but that may be too expensive to feed a large group.
sorry to hear of your friend, maybe some grilled corn in the husks
Sorry about your friend Caney.
Turkey boulders are allways good and spicy coleslaw to go with the goodies.
CT? Perhaps a big pile of wings and/or drumsticks?
You should most definitely do Sonny's Cilantro tater Salad for your WOW Side
Chris, that is a great idea. Since I haven't done the cilantro salad, it does sound like a great time to do it.
Here's the menu for tomorrow - wish me luck!

2 butts
meat loaf SW style
pastrami
Brats
Bologna
bacon
Spatchcocked chicken
ABT's 2 ways
Fatties 3 ways
Caney Breakfast muffins - 2 ways
Chicken wings 2 ways
Bacon wrapped shrimp
Bourbon brined shrimp
Smoked catfish dip
Bacon dip
meat lasagne
Sausage/green chili pintos

You got some really big plates cause Id like to have one of every thing.
An Irish friend of mine died a couple of months ago and his colleagues (He was a bar owner) threw a great wake with terrific food, booze, and most of all, a huge crowd of old friends sharing memories and stories. It was an honor and a joy to attend - may your day be likewise.
What ever you choose my friend is fine, I think that what you are doing to honor a friend is absolutely wonderful...love this forum...
Ka Honu says it beautifuly. Your menu looks wonderful, may your day be the same.
Good luck and look forward to seeing pictures of this feast.
Great way to honor a friend.

Awrighten.
sounds like some good eatin, Paper plates and plastic ware I hope ;)
Hope all went well today bud!!
All went well - some pics are forthcoming when I get some time to download the few I took - but mainly need to get the pics that a buddy did - I didn't have time! I came home and put the food away and laid down for nap and didn't wake up for 14 hours. This boy was pooped!
Hits or at least got the most talk!
Chocolate Cobbler - this was eaten before I started serving everything else. This is simple and killer! I can't recommend this enough! I can't imagine how good this would taste with some vanilla ice cream and pecans and maybe some caramel sauce - I might just faint! So many thanks to ronbeaux for posting this. I was skeptical, but should not have been. Had never heard of it before!
CT Cashews
Breakfast muffins -they were renamed them JWM's - John Wayne Muffins.
NL Lasagne - this is a new idea and will be great when tweaked.
Brisket
Shrimp with bourbon teriyaki glaze
Smoked Catfish Dip
ABT's stuffed with chorizo/cream cheese mixture, wrapped in bacon.
Breakfast fatties
ABT's with goat cheese
BoBo steak.
Hot buffalo Wings.
Figgy Fatties
Boudin
Sausage
Not getting any talk
Meatloaf
Pulled Pork - even though I thought it was quite good
Beans - and I thought they were killer - more for me
Wings with teryaki/pineapple/coconut
Italian sausage links
shrimp and pepper jack wrapped with bacon
Choirizo dip
Goat cheese fatty
Didn't get to do - forgot
Pastrami - I didn't serve - it didn't get done in time.
Bacon with rub and brown sugar - I just forgot about this one
Bacon/white cheese dip - didn't need 3 dips - didn't know I was going to have some of the chorizo/cream cheese mixture leftover, so just made a dip outta that.
Good friends, good food.....what a way to remember a friend!

No Sonny's Cilantro Potato Salad?
(woulda made da TALK GROUP)
Yup, that was sad. However, one couple wanted to bring some fudge pies, one couple wanted to bring some chicken and dumplings, and one guy wanted to bring some red potato salad. So as I was going to have some.... uhmm.... time management problems on Friday night and no time to make it on Sat. I said - bring'em on! The funny thing is that the lady who made the chicken and dumplings (which were fantastic BTW) must be an organizer extraordinaire' . I turned to the smoker to fuel and mop and I turn around and she had all my spices lined up in a neat row, all the canned goods organized, the pots and pans stacked, and the knives and tools in a neat row - I must say Caney has never been more organized - at least for a couple of minutes!
This is what we were celebrating on Saturday. His ashes had been shipped to Montana to be released in a river he really loved and would talk about frequently.

Some CT cashews that were inhaled.

What was left of the wings. These were the Polynesian Baby Pins - the open space in the pan was where the Smoked Buffalo Drummettes were.
More pics to come ------ eventually
Beautiful job Caney, I look forward to the rest of the pic's.
Two Five more shots - they are really coming slowly - I gave him a thumb drive - maybe he'll use thatl
JWM (John Wayne Muffins) and some sausage bathing in all that smoke

Some of the Friendly Vultures waiting! And by the shadows, relatively early in the morning - they were eating the JWM, the nuts, and the chocolate cobbler. Yep - Caney at the smoker! The young man to the far left in the top photo is Japanese and is 15 now. He is now a very talented fly tyer. He started fly tying at 12 when they came to Nashville because of father taking a job here. You know that little oriental guy who has the record for hot dog eating - well I think this guy is his cousin. He can put away the barbecue!
