Ok, I have gotten some good info from reading the forum about GB jerky but can someone send me a link to GB pepperttes and flat jerky recipes. I have waded through and found a couple that use casings but I would like to do them without casings. Thanks in advance my friends!! :D
Just use the same recipe but don't stuff it into casings then. It's that simple.

I have made GB jerky and sticks from this recipe. Gregs spicy beef sticks.
For sticks just use the smallest horn you have and the flat attachment for jerky.

Are you going to buy the meat already ground up?
I already have it. I bought it a couple of weeks ago (and froze) when I was across the line in the US. It's cheaper there and they have the ratio on the packaging which I have yet to see in Canada. It's 85/15. ??
85/15 might be a little too fatty.
How much meat are you going to do?

You can use the 85/15 and it will come out fine especially in the casingless sticks. When it comes to jerky it's usually the leaner the better.
I'm a Canuck as well. Up here we use Regular, Lean and Extra Lean.
Here are the ratios from the Canadian Food Inspection Agency
•maximum fat levels:
extra lean - 10%
lean - 17%
medium - 23%
regular - 30%

Thanks, it's my first try so while I hope for great results I know I am on a learning curve lol. I am seasoning the smoker as we speak but I do have a question someone may be able to answer. I set the temp for 150 as it suggests and it currently reads 176. Shouldn't the heat shut off or ?? when the temp I set is reached?

It smoking good now! I even picked up a digital thermometer and an extension cord because of course it doesn't reach anything outside. I live in a tiny one bedroom basement suite and it's not the greatest of areas so I don't want to leave it outside so I'm going to throw in on my dolly with a piece of plywood under it and wheel it in and out of my tiny house. I'd hate to come home and find it gone... :'(
Running the Bradley on a extension cord can be bad.
Needs to be a short 12 gu extension cord.

I know lol...but I'm a girl Sonny and we like our things to look shiny and new for as long as possible. As for smoking, Greg's recipe says 1.5-2 hours of smoke at 150 F....thanks!

Oops Sonny, the rest of what I wrote did not show up. Should I turn the smoke off after 2 hours when I raise temp to 175F ?
You can do that if you wish or you can program your smoke generator to only smoke for two hours.
haha..I wasn't going to use all those pucks...I just threw them in there to empty the package out. Smoke will be off soon and then I'll just run the oven temp at 175F until the meat reaches 152F.
rotate the racks (front to back and top to bottom) every now and then.
Just did that..you must be psychic Sonny! I changed the water too as I forgot to check that earlier and it was full of pucks! Some is off and just oven is on now.
Just a suggestion, if or when you have finished the smoke don't put the bowl back in as you are trying to dry that meat out. GB I find takes a lot longer than whole.

People have to do a lot of things in life to figure out what they don't and do like. I had to try peas to realize I didn't like them and in your case you tried out one wife and found that you did not prefer her. Marriages are like a good smoker....if you have a good seal, proper temp, good meat and a good recipe, then everything inside is well balanced (your going to feel good inside about other person and them about you), but a bad seal, crappy meat and a untested recipe is going to leave you with crap inside (unhappy and miserable with your choice) and in that case you just need to try again until you get it right! Bad analogy but I'm sure you get the point lol.

Thanks! I must admit I did burn myself rotating the trays lol....then got into a hot shower and burned it again. Learning curve!..only try to rotate one tray at a time with oven mitts!
North get your self a pair of leather woork gloves. Brand new, nice and clean. They fit good, don't have holes, They come up past your wrists and they don't slip off. They work great for rotating racks and handling food. Of course they will eventually get greasy so just throw them in the wash.
If you can't find a good heavy extension cord (which should be 12Ga) that is just long enough to reach were you do your smoking I could make one up for you for the cost of the cord and plug ends. I made my own which is only 15' long and it works great. You don't want your cord any longer than it has to be cause you get voltage drop, and the longer it is the more drop you get.
Ya, Sonny mentioned that about gauge and length. I didn't make it to CT to get another one yet, so used the long one-14 G that I had but would love to get a shorter one that is the right G and length. Sure, just PM me with the cost and I've got some salmon steaks in the freezer I would gladly hand over if you like sockeye salmon for doing it for me. I actually have leather gloves that I will be pulling out next time. I also have the rubber oven mitts which are easy to wash, I was just being lazy so deserved to be reminded that things are hot.

Hey west of 60 great looking sticks. I bet they taste great. I see you mentioned smelling like smoke after a day of this. I have had to head for the store smelling like that. It is kind of funny watching people after they walk by you. They turn around and take another sniff. It is embarrassing when they stop and try to lick your cloths.

hhahaha KC. I can smell it all the time as I now have my smoker on a dolly so I can roll it into my small little place so it doesn't get stolen out of my backyard. I went over to my friends after I was done and apparently the dog could still smell the grease and smoke on me cause she was all over me lol. Oh well, to be able to do things like I did today that most people would not bother to try is worth it!
