Title: Pepperoni Sticks

Made Nepas Pepperoni Sticks/Ropes tonight from his recipe here (12.5lbs.):

The only thing I changed was the cayenne pepper for fresh Jalapeno's. I cut them up and added to the mix  ;D

Here is the mix for the night of stuffing

Here I am out on the deck on Oct. 7th and its 21 °C. This is unheard of up here in northern Ontario. Oh well great weather for the Kirby stuffer to start stuffing those Pepperoni Sticks/Rope. Notice I already have the deck all tarped in for the winter  ;D

Those look great..can't wait to see the finished product!  I am doing Greg's spicy sticks tomorrow without casings (first time smoking) and looking forward to the process!

So did you stuff them into one a long continuous ring and then later cut them into rack size sticks? If so did you tie the ends?

Yes to the long rings and no to tying them off. To much work and to many beers so I just cut them to size.  ;D

Got busy with life's other things that happen so I'm a little late on posting the finished pics  :(

Well here they are. I have to say the red wine gave it a very different flavor. I could taste the wine for sure. Guess that's not a bad thing but I'm not a fan of red wine. I read an article on cooking with red wine and I think it hit home with this.

"The first and most important rule: Use only wines in your cooking that you would drink. Never, never use any wine that you WOULD NOT DRINK! If you do not like the taste of a wine, you will not like the dish you choose to use it in."


Other than that they where pretty good. I liked the amount of heat from the fresh peppers, it was just right.

Some ends got burnt but with very little trimming they will be just fine. This is after a day in the fridge.

Those turned out great.  I'm not a big fan of wine either but the jalapeno's look good in there.  :)

Looks good and tasty Northern Ontario neighbor ,like you mentioned unbelievable weather lately .Just bought a stuffer myself and looking forward to start trying sausage I have been doing hams and bacon for years. Those peppers sure look tasty in the sausage
