We live in Wasilla Alaska and I can't wait to try out our new 6-wrack digital smoker. Got a freezer full of moose and reds ready to smoke!   :)

Welcome to the forum.  If you read through all the various subjects on the forum you will be ready to go but anytime you have a questions ask because the people on here are very helpful.  Enjoy your new smoker.  I love AK, I used to live in the Yukon so have been to AK a few times....so beautiful!  :)

Well, thanks a bunch and happy to be here! I've got salmon drying in the fridge with a small fan at the moment. Used the famous Kummok smoke salmon recipe and can't wait to get it all into the smoker in the morning. I'm hoping that the drying method that I'm attempting will work. Anyone have luck drying the salmon in the fridge. If so, how long should it take? Small Red salmon cut into 1/2" to 1" thick pieces.

Welcome, Keep us posted on the salmon. I've got my 1st  batch sitting in the brine right now and plan on letting them sit in the fridge w/o a fan. Curious how yours come out.

Hey, Kickback thanks for the welcome.

I finished my batch early this morning and I gotta say "Holy Smokes". Best smoked salmon I've ever done! I mean the best!!!

I mixed up two batches... one soysauce and one teriyaki. The soysauce smoked was a bit salty, but good though I'll probably just go with the teriyaki from here on out. It is amazing!!!

The finished product... Flavor, salty/sweet, color, moist, smokey goodness would be hard to beat prepared anyother way. LOL!

Highly recommended! Let me know how yours finishes up.

Glad to hear it! I've tried a lot of different recipes, but this one is the winner! Got a much larger batch in the brine at the moment. Larger pieces this time. Will assume that it will take longer to smoke. We will see.

First off...glad that we have yet another Alaskan...Akmoose you must find the Iceman...he is the koolest guy...

Other than that...holy moly that salmon looks to die for...I envy you guys that live up there...you wouldn't belive the crap they call salmon in California...ick...
