Title: Mike's Kielbasa with a Sailor twist............. To Go!

Made up 10 lb's of Mike Kielbasa (thanks Mike) and stuffed in the cellouse casings

using Powdered Milk (thanks Sailor) to help as a Binder.

Sonny the kielbasa is killer, made 10# over the weekend, made 11 rings, I will put this up against Johnsonville or Hillshire farms, that's ho god it turned out, I did have one blow out, it looked more like a pinhole but was leaking other than that overnight in the fridge and it peeled great, use some warm water to rinse off extra grease. Tim

Water Bath, Bloomed, and going to the fridge.

Gonna run Daughter to Airport and will unwrap and vac pak when I get Home.

This too is some MIGHTY fine eating.

The surprising thing about those cellulose casings is they are tough when

you stuff them and they are cake when you take them off. Sweet!

Sailor can correct me if I am wrong, it is2oz per 5 lb. 

My notes are in Texas and I amin Florida.

I use 1 oz of non fat dry milk per 5 pounds.

So that is the language barrier.  Texans and Floridians speek different languages.. But CRG, even if your notes are written in Texas language, you should still be able to read them no matter where you are.   ???
