Title: moose sausage

A friend dropped off 10 lbs of moose trimmings so I'm looking for a good moose recipe. Fresh sausage will be first up, followed by some smoked and hopefully some salami (he has 200lb + of trim) I'm thinking of using a tried and true recipe for boerowors that calls for 50% pork and beef and subbing moose for the beef.Any Ideas?

 I have lots of moose trimmings and I just substitute moose for beef and follow the recipe. Its pretty hard to tell the difference. It makes great pepperoni. Thks Piker
