Title: Newbie's first Tri Tip
Post by: cheapevil on October 16, 2011, 04:04:00 PM
So I got the 4 rack digital smoker that my buddy who moved to Texas gave me before he left. So I have done 2 briskets that turned ok but no where near as good as the ones he made for all the dinner parties at his place. So today I'm trying a Tri Tip. I used a dry rub, kinda already screwed up there since it was only rubbed down in the frig for about 7-8 hrs. spaced it last night. I did buy a choice tri tip so hope that helps make up for my screw up. It is 2.2 lbs Got it set at 250 gonna smoke the whole time. So my question is there a time line per lb that you use? Hope to hear some feedback soon. Just put it in about 15 min. ago.  Oh yeah I seared it in my cast iron skillet for about 60sec each side before putting it my smoker.  Thanks in advance for feedback.

Chad

P.S. Will post pictures from start to finish when all said and done.

Try a internal temperature monitor.  Tri tip should be cooked at an IT of 135-140.  No more than that.  Try not to open your cabinet to often.

A Tri-Tip that size will take 2.5 to 3 hours at 225F to reach a IT of 140F. So at 250F it might take around 2 hours. A IT of 140F will give you a medium rare perfect tri-tip. Any higher than 140F is overcooked IMHO :)

So is 250 gonna be too high don't want it to be tough. I had plan on checking meat temp at around 2hrs.

I like mine better at 225F. It takes a little longer but they come out so tender :)
