Hello All,
just wanting to introduce myself, my name is Sharne and I am from Auckland, New Zealand, I have a bradley digital 6 shelf smoker aswell as a cold smoker prototype which I bought from Bradley Nz.
I am hoping some fellow members have some advice or tips on smoking steaks before grilling them? I have spent the last 15yrs smoking seafood and fish but smoking red meats is all new to me.
Firstly Sharne...it's so kool to have people on here from places like New Zealand...so much fun to hear what you may smoke so a big Welcome... ;D
Hello Sharne and welcome to the forum. I'm rooting for the All Blacks today!!! Lot's of people cold smoke steaks before grilling them.
Ed: That was a nail biter!! Well done
Welcome to the forum.
If you are wanting to smoke with the Bradley then I would recommend you cold smoke with your favorite wood (the harsh woods are great on steaks (Oak, Hickory, etc.)) for about an hour or until the temp gets to warm. Start them off as cold as possible but below freezing. After smoking either vac seal or wrap in Cling Wrap and place in fridge overnight. This method will allow the smoke to penetrate.
I personally prefer to grill steaks over wood chunks and charcoal. Much more flavor in my opinion.
