The more I looked at that last night, the more I said "Gotta do." So at 6PM I climbed into the truck and headed to the Grocery store.
After a quick trip to YouTube to find out how to do a bacon weave, I assembled the beast. It rested in the fridge last night, and went into the DBS6 about 2 hours ago. If I had the gumption to figure out how to insert a picture, I'd put it in. (I'm not that motivated at the moment though)
Thanks for the inspiration. My weave was not as tidy as yours, but I think in the long run, it'll work.

Beautiful, and your ingredients are the right stuff.
Can't think of one thing to change except how many you made. You got it all going on. I may throw one together just like it when this bacon is cure and ready to smoke. Oh that Bacon weave is one of the nicest I've seen yet. Nice and tight but not stretched or tore. Beautiful piece of art!

The best advice I can give is to let the bacon come up to room temperature so It is easier to work with. After mix up the ground beef and italian sausage I lay it out on a cookie sheet (the smaller sized one) and press it flat. After that I roll out some plastic wrap and turn the cookie sheet upside down onto the plastic wrap. Once the meat is on the plastic I add all the fillers and then start to roll. Once you have it rolled you need to "message" the roll and work out all the air. I also make the bacon weave on a piece of plastic then add the meat roll "without the plastic" and roll it up the same way. After the meat is in the weave I roll tight in a lot of plastic and continue to message until its rolled out perfectly and then its off to nap in the fridge. Hope this helps!
