Title: My first Buffalo/Angus Snack Sticks

Good Morning all,
I took a stab at making my first batch of Buffalo/Angus Snack sticks. I had about 2lbs left over and wanted to finish it off. So i bought the kit (Garlic/Cracked pepper) plus added my own special touch. The fry test was very Tasty. They are in the fridge resting getting ready for afternoon smoke.
  After they get finished smoking, is there anything i should do special besides cut and eat? I don't want to mess them up. Hopefully I got this right.

They look GREAT!  But, the only way to be sure is to package some up and send them out to me in the Show-Me state of Missouri! I'll then be able to give you my honest opinion.

I think they are 21mm casings. i will have to check..
I am waiting on a few more packs of meat, if they turn out ok i will definitley send some out for tasting ;D

My good friend has bred his buffalo to a large angus twice and you see the size of these calfs when they got big. Very Interesting combination and the meat has been quite pleasant to eat...

Do I put water in the bowl when smoking snack sticks??

When you smoke and are using the pucks you need to have water in the bowl.  After the smoke you can pour the water out but put the bowl back just incase you have any fat out.  You should not have any fat out if the cabinet temp is kept below 170.

Nice looking stix.  Never had any buffalo angus stixs before.  Got a money shot?  ;D
