Title: Pimento loaf style suasage

Has anybody tried a pickle & pimento sausage? I've had it as a basic loaf but never a sausage. If so what type of pickle does everybody think might be good? I've also had pimento stuffed olive loaf, very good stuff. I was thinking of using a basic weiner recipe for a base.  I may take a run at this but need some ideas.

Never one to let fear or common sense stop me. ;D

I just use a basic summer sausage recipe and add what ever I like to it.  I have used olives, cheese, sweet pickles. red pimento,dill pickles, The only thing I do different I try and make the meat more finely ground. I grind it thru a fine plate instead of emulsifying it. Thks Piker

Corey, I think your basic wiener recipe would do just fine for the overall flavor profile. As Piker mentioned, a very fine (3mm) grind  (in lieu of using a processor) will give you the desirable texture, and add the coarser chopped green olives, pimentos, and sweet* pickle pieces after the grind.
Wrap the loaf in a couple of layers of plastic wrap, tie the ends securely, insert a temp probe & then lightly poach (160-165°) until desired IT is reached.

*I don't like dill pickles, so realize my opinion is tainted..... ;)

Man that sounds good. I use to love pimento olive lunch meat. Haven't had it in years.
Make sure you take pictures of the process. this ought to be good.

X2 Pimento/olive loaf lunch meat USED to be one of my Fav's.

Just put it on my Grocery list. ;D
