Title: Nepas trail bologna

Mixed another 10 lb batch up. Finished smoking last night. Looks beautiful. The wife loved this so much the last time she wanted more. But this TASTES AWFUL! From the taste I believe I forgot some how to add the salt. Strictly my fault  I know. the recipe is great! Now what does a person do with 10 lbs of unsalted bologna? LOL

Smoke it, chop it up and mix with mayo for smoked balogna salad..     LOTS of it.

Well I broke the first and only rule. Always fry some to taste. But i've made it before no problem so didn't feel it was needed. Now I know it's not just for new meats but to check you have the taste your after even in old recipes. Won't forget again. It's really quite bland without salt. But may be alright on crackers with mustard and cheese.
I also like the bologna spread Idea. We love that but never thought of it. It's already smoked well as you can see. But catfish bait????
