Title: my first try at Muebe nuggets

hello
my first attempt at my version of Muebe nuggets
marinated in the following for a day
3 cups honey
3 cups soy sauce
16 tbs ground ginger
6 tsp hot red peper flakes
10 crushed garlic cloves

the nuggets are stew meat and the strips are some minute steak i had kicking around
for a total of about 6 lbs of meat

warming up on the racks
had to use the boss' drying racks for cooking to make the holes smaller, as my frog mats had not yet
made it - she was not very happy;lol

all done - temps are approx. as my digital display went out just after i had the racks  in
so i had to use the boss' thermometer stuck in the top thru the vent - once again she was not happy;lol
1hr @ 140
2hr @ 170 with crown royal smoke
3hr @ 180 with water removed

they didn't last very long

Did you use cure #1 in your mix?

thanks for the nice comments guys,
even the boss liked them and she doesn't like jerky all that much
only thing i forgot to do was rotate, so the bottom racks were a little more
smoked and dried which me and my oldest son didn't mind at all  ;D

no sailor i didn't use cure #1, i thought about it, and actually went out to try and
find some, went to grocery store , 2 butchers, cabela's and could not find any >:(
one butcher told me it is almost impossible to get up here in canada as a consumer,
would love to hear from a fellow canuck on this

so i did some reading on here and decided to give it a go with out

They look excellent!!! 16 Tablespoons of Ground Ginger, is that a typo? Seems like that would  be a cup ;)

16 tbs is probably a cup, never thought about that
i was upsizing from a recipe, so i just kept with the tbs, will have to measure
into a cup next time and see, would make it alot easier to just fill 1 cup, then 16 tbs :)
its a marinade recipe i have used lots to do kabob's on the bbq with, so i needed to upsize
to cover all the meat this time

if you are in the edmonton area check out halfords, they are a butcher supply shop and have everything from butcher tools,spices&cures to sausage casings.

Hey Rigstar I get my cure #1 fron Halfords they have a store in Edmonton and Calgary reasonably priced ship by mail or bus. There catalogue is online. Piker
