Title: Smoked 15lbs of Cheese

Looked in the fridge and I was running low on cheese, so went to Costco and stocked up on cheese.  I ended up doing cheddar, pepper jack, and guoda.  Did 2 hours of apple, then pulled them and let them sit on the coutner for 1 hour.  Then into ziplocs and into the fridge for 2 days, then wrapped with saran wrap and vacuum packed and into the back fo the refrigerator.  Now the hard part waiting a month.

That is a load of cheese.  Be very very quite cause if the neighbors and family find out you have smoked cheese they will rob you blind.  Then you gets to make another batch  ;D  I only have 7 more days until I can get into my load.   :P

Temperature outside was 45, the cabinet temp never got above 60.  I used my Bradley cold smoke adapter.

I do use mine too...just have to wait until it gets below 50 here...

I wish my Costco had blocks of pepper jack. I look every time I go.
