There are several discussions already about turkey breast. Here's one with some good ideas:

Last Aug, I rubbed down a 7.5 lb breast with Jans Rub under the skin, over the entire chunk o meat and inside the cavity. I rested in the fridge for 24 hrs then smoked for 2 hrs.. back in the fridge for a day ( i had a full brisket to smoke) brought it out and finished it to an IT of 165... It was perfect I wish I had another one for next weekend.

May i ask a qustion? Why do you do just a breast? I find the dark meat is much tastier when smoked? Just a personal prefernce...same for you?
