Title: Bland GB Jerky

Well I made myself a jerky board in attempt to do some gb jerky. The board worked great very easy process. I got 5 lbs 93/7 I'm thinking a little too lean? Let it sit overnight in the fridge with cure #1, soy, worch, garlic, pepper, onion powder, and a little chile powder. Rolled it out and sliced it yesterday and got it on the smoker at about 4. Finished it up just before 11. Put it in a paper sack and into the fridge last night. Got up this morning to try it out and it was really bland. Not much flavor at all. Any thoughts?

no salt?

for a 5 lb batch should be 3 Tbs or to your taste.

NEPA, nope I didn't use salt. The recipe called for quite a bit of soy sauce so I thought that would take care of it. Live and learn right?

I usually add some red pepper flakes to my GB jerky.  I just run it through a coffee grinder.  Amount varies and depends on who will eat most of it...
