Just wondering what everyone does on their deer to pork or deer to beef ratios when they are making snack sticks. I prefer a 50/50 venison to pork butt ratio when I do summer sausage but I have yet to figure out a good ratio doing snack sticks. Any info would be greatly appreciated!
I use 15lbs lean venison, to 10 Lbs pork butt, but the butts I get here are usually pretty lean.
6 lbs venison 3 lbs of pork 1 lb pork fat for a 10 lb batch is about right for us on sticks.
