Title: Maple Cure Picnic Shouldet

After some questions I had on a maple cure, I decided to give it a try.

I used the Cabelas Maple Cure per the package instructions.

I removed the skin and as much fat as possible.

Got it in a 3" elastic net... Not sure how! I need to order some ham nets cause it was just insane.

I then injected it to 15%. I plan to leave it 4 days and see how it turns out.

Sitting at 135.  I should let it sit in the fridge for a couple days. But that might not happen.

Real good looking ham, it would be hard to let that sit in the fridge. I'd be so tempted to eat it!

Sam you are right. That net is just too small. That poor baby is packed in there tight. Kind of looks like a overweight lady in a fish net stockings. The finished product does look good though.
