Was 81* today and you can cold smoke cheese if ya know how  :o

That cheese got a good dose of smoke looks like. Still 32° Here, 27 this morning and had a half inch of snow yesterday.

That's quite a selection of cheeses and it sure looks good.

In this part of the world there is no problem keeping the smoker cool right now - its the other way around. It was 10*F this morning and got all the up to 20*F this afternoon.

Cheese took on some nice color. I like how it is rounded on the edges from the process.
