today i made 28 lbs of bologna 50/50 deer beef the guy on you tube said 180 IT
even though i lost track of time and cooked it to 185 and split my casings is 180 high or 150 to160 like i would summer sausage be better?

Cook mine to 150-152 and pull . It still climbs a little when sitting. Works just right!
