Here is a "little" AAA Canadian brisket I picked up last friday. ;D
It was right around 14lbs . 5lbs went to jerkey and the rest was smoked for Sunday night dinner.
This was a REALLY good brisket, probably my best to date. It was sooo moist and tender.
Prep was simple, cover with a good coating of Head Country rub(one of my MOST fav) and some extra cracked black pepper.
smoked for 2.5hrs with hickory total cook time was approx 15hrs to an IT of 195F. It did Texas crutch it at 160IT. :o :o
