My Sister went to Louisiana for thanksgiving and brought me some goodies...

Any ideas for smoking/cooking/preparing are greatly appreciated....  (Eh Um Kynola  and Hal4UK ;) )

Me and my deep feezer are very happy....

The wife, not so much >:(  Apparently I am suppose to run $$$$$$ things by her first.  But Isnt it easier to ask for forgiveness after the fact?  :) ;) :o

Whut you need to do is go ahead on....
and send me ALL them deboned chicken stuffed with crawfish dressing...

I'll work on some recipes fer ya!!!!!!!

Sorry Chickens are locked away and I seemed to have misplaced my key.... 

Any recipe would be greatly appreciated.  I know I have seen some pretty good ones that you have posted on here...

That looks like some future  great eats at your house.  That stuffed chicken really made my taste buds perk up and start whining for a taste test. 

Two questions though
1.  Where do you get a sister that goes to Louisiana and sends something to you.  I've got two - neither have sent me anything aproaching that when they visit somewhere.  Maybe because I haven't sent them things from where I've visited.  So my conclusion is that Snelley must have done that and I pin a gold star on him for being a good brother.

2.  Where did they find boudin with balls?  and why 9?

I'm Sure I will....  I will be smoking the chicken sausage and I'm sure I'll have questions for the Sausage King.

1.  I try to be a good brother and I guess I am.  She knows how much I love to smoke/cook and with her driving it saved me on shipping....

2.  As for the boudin ball, I have heard of them but never tried them.  The package says to deep fry so I am assuming that they are not in casings.  9 is why I got two packs.  ;D  ::) I had asked for boudin sausage but i guess they did not have any....  Again I ain't complainin'  ;D :P

What a load of deliciousness!  That Savoie's andouille is really good.  As for those crawfish stuffed chickens, put them in your smoker or grill and smoke/cook them just like you would any other chicken.  Check the IT to make sure they are thoroughly cooked.

The boudin balls are definitely not in a casing.  Basically, they take the boudin "stuffing" and form it into a ball and roll in some sort of breading, usually bread crumbs.  They are way good when fried but you can get away with baking them but heck, splurge a little and deep fry those babies!

The other sausages are obviously fresh and have not been cooked so you can either grill, smoke, bake or even boil them in water or beer like you would a brat.

Man, I am really hungry right about now!  Your sister done you proud!

Heberts Boudin balls usually have a batter on them. All you should have to do is let them defrost and throw in the fryer.. and then add hotsauce.. ;D
That sausage is really good once smoked.. I had to look back at the package cause i was jealous.. lol..
