Got 3 lbs of salami mixed up. Going to do the cellulose casing i got from Jim.  Dont know if i will put much smoke to em.

Hey i might even hook up my KC cuz wife will be at work. Gotta meet a guy at BPS to get more venison.

Hey Rick,
Not sure about the salami but use the hot snack stick and the normal snack stick from Con Yeager, Man is that some good stuff, so I hope the slami turns out as god as those two, Keeps us posted

I made 10 lbs of this back in PA, its good. CY has some good kits.

Boy your wife still holds that one little incident against you. She has a memory like an elephant. I use mine in the house all the time. The thing that gets me kicked out side is when I make sausage with a bunch of friends. We do large batches and those monkeys can spread meat every where [no offence ment CRG] I had one guy that kept flicking his hands to get the meat off. My wife found meat on the ceiling. Crap,, now that got me in trouble.

Let me tell you and old meat cutters trick. Take a freshly sharpened knife, one with a curve in the blade. Now use it as a scraper and drag it sideways across the cutting Board and shave the surface off of the cutting board. You should be able to shave the cutting board surface until it is scraped down to the clean plastic. I do this all the time and keep my boards in good shape.
